(MEATLESS/VEGAN/VEGETARIAN RECIPES) This past year since starting my blog I’ve tried lots of different foods and recipes but have managed to avoid probably one of the most obvious vegetarian and vegan favorites: tofu.

I had it years ago and was not impressed. I thought it was bland and mushy. Tofu lovers kept telling me I didn’t give it a fair chance, and that I just needed to find the right recipe. It turns out they were right.

I was walking through Whole Foods last week and smelled this amazing aroma coming from the back of the store. I went to check it out and found a sweet woman named Grace sautéing what looked like chicken and vegetables in a skillet.

She was actually doing a cooking demo for House Foods’ Organic Tofu. It smelled so good I decided to sample it anyway and YUM! The tofu wasn’t at all mushy. The secret is she used extra firm tofu and cut the pieces thin and at an angle.

And forget about bland—every bite was a savory morsel. Of course I had to ask Grace to share her recipe, and she generously obliged.

Grace’s Savory Tofu & Vegetable Sauté

Ingredients:

  • 1 12 oz pkg House Foods’ Extra Firm Organic Tofu
  • Any of your favorite mixed vegetables (Grace used carrots, broccoli & onions)
  • 2-3 cloves of garlic, minced
  • 3-4 tsp Bragg’s Liquid Aminos or Soy Sauce
  • 2 tsp grapeseed oil (Grace prefers it to olive oil because it doesn’t burn)
  • red pepper flakes to taste (optional)

Directions: Cut tofu in thinly sliced pieces. Heat non-stick pan on high, use cooking oil spray if not non-stick. When pan is good and hot add tofu and sauté until browned. Add oil to center of pan, mix in garlic and heat for about 1-2 minutes. Stir in vegetables, red pepper flakes and Bragg’s Liquid Aminos or soy sauce. Cook for about three minutes, longer or shorter depending on desired tenderness.

*Grace says she prefers to use Bragg’s Liquid Aminos because it’s Gluten-free, GMO-free and less sodium than soy sauce. Though it’s made from a chemical process rather than naturally, so be sure to read the label and decide for yourself.
