(MEATLESS/VEGETARIAN RECIPE) I came across a Facebook posting from my friend Crys for a cucumber “tips & tricks” list from Conscious Life News. I’ve always loved how cucumbers are light and crispy, but I never realized how nutritious they are.

Just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium, AND Zinc…phew! I guess my mozzarella, dijon, and cucumber pita melt sandwich was healthier than I thought.

Now if that’s not enough, according to the “list,” cucumbers can also be used to diminish cellulite, avoid hangovers, freshen your breath, polish your shoes, get rid of pests in your garden, and clean your bathroom. Quite the all-purpose vegetable—or should I say fruit since that’s what it really is.

Well fruit or vegetable, I was craving some. I found this yummy cucumber salad recipe on the Cooking Channel’s website. It’s satisfying and simple—the perfect summertime dish!

GREEK FETA & CUCUMBER SALAD

(serves 4-6)

Ingredients:

  • 2 English cucumbers (seedless)
  • salt
  • 1 cup crumbled feta cheese
  • 2 tbsp fresh oregano leaves
  • 1 clove garlic, minced
  • 1 shallot, minced
  • zest and juice of 2 lemons
  • 2 oz extra virgin olive oil

Directions:

Slice cucumbers as thin as you can (to make it easier use a mandolin or vegetable slicer if you have one.) Toss together the cucumbers and a large pinch of salt in a mesh strainer set over a bowl. Combine the feta, oregano, garlic and shallots in a separate bowl. Add the lemon juice and zest and whisk in the olive oil.

Drain off and discard any water released from the cucumbers. Mix the dressing with the cucumbers and enjoy!

Per serving: 252 calories, 22g fat, 6g protein, 7g carbs

This dish takes only about 15 minutes to make and is so light and refreshing. Just think, now if you have any cucumbers left over you can always clean your bathroom, too!
