While Brussels sprouts are often eaten cooked, they are equally delicious raw like in this Shaved Brussels Sprouts Salad with Hazelnuts and Dried Cranberries.
The mighty sprout is proven to help lower cholesterol, prevent cancer, and help with digestion. Besides being nutritious, shaved Brussels sprouts are a tasty option when you’re craving a hearty salad and don’t want to use your usual lettuce. As always, happy eating! — Global Animal
Shaved Brussels Sprouts Salad With Hazelnuts & Dried Cranberries
Yield: 2 servings
- 1/2 pound Brussels sprouts
- 1 Tbsp Dijon mustard
- 1 Tbsp apple cider vinegar
- 1 Tbsp pure maple syrup
- 1 Tbsp olive oil
- 1/4 cup hazelnuts roughly chopped
- 1/4 cup dried cranberries
Using a sharp knife and your incredible knife skills (or take a short cut and use a food processor), cut Brussels sprouts into very thin slices. Place in a bowl and toss to separate layers.
In a small bowl combine the mustard, vinegar, maple syrup, and oil with a fork.
Add the dressing, hazelnuts, and cranberries to the Brussels sprouts, and toss to coat.
