(VEGAN/VEGETARIAN RECIPES) Valentine’s Day is coming, and sugar cookies are the perfect gift for your sweetie. These cookies are fluffy and chewy and you can roll them out to cut heart shapes. Using Earth Balance keeps the buttery flavor of traditional sugar cookies.

Valentine’s Day Sugar Cookies
Yield: 12 cookies
1 cup Vegan Sugar
1/8 tsp Salt
3/4 cup Earth Balance
5 tbsps Almond milk
1 tsp Vanilla Extract
2 ¼ cups All-Purpose Flour or Pastry Flour
1 tsp Baking Powder
2 cups Powdered Sugar
2 tbsps Almond Milk
With a fork, cream the Earth Balance and sugar together in a bowl. Add in the flour, baking powder, and salt and stir. Then stir in the 5 tbsps of almond milk and vanilla until you have a ball of dough.
Cover the dough and chill for at least an hour.
Pre-heat the oven to 400 degrees F.
Place the dough on a floured surface. Use a rolling pin to make the dough about ¼ of an inch thick. Use a cookie cutter to make fun shapes like hearts or cut out circles with a round glass.
Place the cookies on an ungreased cookie sheet, about an inch apart. Bake for about 8 to10 minutes.
Make the icing by whisking together the powdered sugar and 2 tablespoons of almond milk. Allow the cookies to cool and then add icing with a butter knife or frosting spatula.
