This signature salad is chock-full of spring fruits and veggies like asparagus, leek, peas, strawberries, and lots of parsley, tossed in a simple lemon olive oil dressing--easy, light, and refreshing! For even more protein than what the quinoa and veggies provide, you can add white beans, chickpeas, French lentils, or some pumpkin or hemp seeds sprinkled on top. LA Bullhook Ban Beats Circus Cruelty

(CIRCUS ANIMALS/ ACTIVISM) On Wednesday, the city of Los Angeles dealt a crucial blow to circuses in the area, effectively banning bullhooks, and saving elephants a tremendous deal of pain in the process. After a three-year pursuit of the ban, the Los Angeles City Council voted to forbid the weapon after seeing undercover footage of elephants brutally beaten with bullhooks. The undercover video that helped sway the city council came courtesy of PETA, who once again did their part to protect animals. (MEATLESS MONDAYS/VEGAN RECIPES) For this week's Meat-Free Monday, try this dairy-free coconut horchata--it's creamy, sweet, and loaded with vanilla flavor. But this traditional horchata recipe incorporates one not-so-traditional addition: coconut milk. This will give you a horchata that’s extra rich and creamy, but still totally vegan. Simply soak some rice and a cinnamon stick in water for a bit, then blend and strain. Feel free to add some maple syrup (in place of granulated sugar) for extra vegan sweetness. This beverage is best served on ice with a pinch of cinnamon for the best flavor and freshness, but it can store up to two days or more--just make sure to give it a good stir!
