I discovered the high protein legumes at a tapas restaurant last week and was completely inspired. I had never tasted cannellini before—to be honest I’m not really a big fan of beans—but these were delicious, so I decided to find out as much as I could about them. I really like the texture of the cannellini beans and the way the flavors from the vegetables and spices complement them. Even though I couldn't quite figure out the restaurant's recipe (just give me some time), I combined all of my favorite ingredients and came up with this one. Personally, I think it's just as good. As you’d expect, it’s full of healthy, cruelty-free fare, but what might surprise you is how informative and creative it is. He was promoting his new book The Pound A Day Diet, and two of his dishes included what he called "Miracle Noodles." But now that I know, I think it's pretty cool this year's match-up between the Seattle Seahawks and Denver Broncos is making history—Global Animal style! In the Super Bowl's 48 years, this is only the third time that both teams in the game have animal nicknames—Chicago Bears vs. Indianapolis Colts in 2007 and Denver Broncos vs. Atlanta Falcons in 1999.
