(VEGAN/VEGETARIAN RECIPES) St. Patrick’s Day is upon us, and this Irish soda bread recipe is a wonderful addition to your holiday breakfast, lunch, or dinner. Irish soda bread traditionally includes buttermilk but this version substitutes almond milk with apple cider vinegar.

Irish Soda Bread
Yield: 6-8 servings
- 3 cups Whole Wheat Flour
- 1/3 cup Brown Sugar
- 1 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1 tsp. Salt
- 1/2 cup Coconut Oil, solid
- 1 cup Unsweetened Almond Milk
- 1 tbsp Apple Cider Vinegar
- 2 tbsp Flaxseeds
- ¼ cup Craisins
- ¼ cup Raisins
- 1 tbsp Raw Sugar
- 1 tbsp Cinnamon
1. Pre-heat oven to 350 degrees F.
2. In a small bowl, whisk together the almond milk and apple cider vinegar. Set aside so the mixture can thicken.
3. In a large bowl, combine the flour, brown sugar, baking powder, baking soda, salt, and flaxseeds. Then add in the coconut oil and stir until the mixture is crumbly.
4. Add in the almond milk mixture and stir together with a wooden spoon to form a dough. Add the craisins and raisins and then shape into a round loaf and cut an x on the top. Then sprinkle the raw sugar and cinnamon over the top.
5. Bake for 1 hour on a lined baking sheet or a baking stone.
