Elana’s Meat-Free Monday: Thanksgiving Menu

(VEGAN/VEGETARIAN) Thanksgiving is a time to give thanks over a delicious meal enjoyed with friends and family. Luckily, no animals need to be harmed in this celebration as there are plenty of cruelty-free food options available to enjoy during the holidays. Try this full Thanksgiving menu that includes a sweet potato mash with candied pecans, roasted green beans, a mushroom loaf, and a nutty apple pie for dessert. Sweet Potato Mash with Candied Pecans

Yield: 4 servings

Ingredients

  • 2 Sweet Potatoes, peeled and cut into cubes
  • 1 tbsp Earth Balance
  • 1 tbsp Lite Brown Sugar
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg

Directions

Boil sweet potatoes in a pot or cook in the microwave until soft. Transfer the sweet potatoes to a food processor and add the rest of the ingredients. Pulse until the mixture is creamy. Add candied pecans on top and serve.

For the Candied Pecans

  • 1 cup Pecans
  • 1 tbsp Maple Syrup
  • 1 tbsp Earth Balance
  • 1 tsp Lite Brown Sugar
  • 1 tsp Cinnamon
  • 1/8 tsp Nutmeg

Preheat oven to 375 degrees.

Mix the sugar, cinnamon and nutmeg in a small bowl and set aside. Melt Earth Balance and maple syrup together in a pan. Remove from heat, add nuts and toss to coat. Then toss the pecans in the sugar mixture to coat. Spread the nuts out on a lined baking sheet. Bake for 5 minutes, careful not to overcook so they do not burn.

Roasted Green Beans

Yield: 4 servings

Ingredients

  • 1 lb Fresh Green Beans
  • 2 tbsp Olive Oil
  • 4 cloves of Garlic, minced
  • Sea Salt and Black Pepper

Directions

Preheat the oven to 425 degrees F.

Cut off the ends of the green beans.

Toss them in a bowl with the extra-virgin olive oil, minced garlic, salt and pepper.

Spread them out evenly on a lined baking sheet. Roast for 14 minutes, stirring once halfway through.

Mushroom Loaf

Yield: 4 servings

Ingredients

  • 1 8 oz package White Mushrooms, finely chopped
  • 4 cloves Garlic, minced
  • 1 tsp Olive Oil
  • 1 small Onion, chopped
  • 1 tbsp Burgundy or Cooking Wine
  • 2 tsp Soy Sauce
  • 1 tsp Rosemary
  • 1 tsp Thyme
  • 1 tsp Oregano
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 2 cups Brown Rice, cooked and cooled
  • ½ cup White Beans, drained
  • 1 tbsp Water

Directions

Preheat the oven to 350 degrees.

Heat olive oil in a large pan and add diced onion and garlic. Saute for one minute and then add in the mushrooms. Add the the Burgundy, soy sauce, rosemary, thyme, oregano, salt, and pepper and simmer until all of the liquid is cooked out and the mushrooms are cooked through.

Place the brown rice in a food processor and pulse until the rice is powdery. Transfer the rice to a bowl and set aside.

Put the white beans in the food processor and add 1 tbsp water. Blend together until it makes a creamy paste.

Add the white beans and the mushroom mixture to the bowl with rice. Mix together and then form into a loaf.

Place the loaf on a greased, lined baking sheet and cook for 20 minutes at 350 degrees.

If you would like to add a vegetarian gravy to the loaf, try mixing 3 tablespoons of cornstarch with 1/4 cup of water and then add it to 2 cups of heated vegetable broth. Stir until the gravy thickens.

Nutty Apple Pie

Yield: 6-8 servings

Ingredients

Filling:

  • 5 Granny Smith Apples, cored and sliced
  • 3 tbsp Corn Starch
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/8 tsp Cloves
  • 3/4 cup Light Brown Sugar

Crust:

  • 2 cups All Purpose Flour
  • 1 cup Light Brown Sugar
  • 1/2 cup Oats
  • 3/4 cup Almond Butter
  • 1/3 cup Pecans
  • 1/2 cup Water

Directions

Preheat the oven to 350 degrees.

For the filling, combine the corn starch, sugar, cinnamon, nutmeg, and cloves in a bowl. Add the mixture to the apple slices and set aside.

For the crust, combine the flour, sugar, oats, and pecans. Then add in the almond butter and stir again. Finally, add the water to make into a dough. Set aside a cup of the dough and press the rest of it in the bottom of a pie pan.

Add the apples on top of the dough in the pan and then crumble up the remaining 1 cup of dough and spread evenly on top of the apples to make the crumb topping.

Bake for 45 minutes.
