(MEATLESS MONDAYS/VEGAN RECIPES) There’s no doubting that breakfast is the most important meal of the day. It gets you started, moving, and thinking! For today’s Meat-Free Monday Challenge, we’ve chosen a unique twist on cereal: vegan muesli! As always, happy eating! — Global Animal

Ingredients:
- 2-3 tablespoons rolled oats, uncooked (do NOT use instant oats, these are basically empty carbs with little nutritional value.)
- ½ apple, diced
- ½ banana, diced
- 4 strawberries, sliced (or even better, 1/2 of an orange, chopped)
- 1-2 fresh figs, sliced (optional)
- 2-3 tablespoons goji berries (or raisins)
- 3 tablespoons chopped nuts of your choice, I used walnuts, cashews and almonds
- ½ cup almond milk (or more if you like)
- ⅛ teaspoon cinnamon
