(MEATLESS MONDAYS/VEGAN RECIPES) For this week’s Meat-Free Mondays Food Challenge, we’d like to share one of our favorite recipes—an easy-to-make vegan burger. It’s full of protein and great for dinner parties. Happy eating! — Global Animal

Ingredients:
- 1 1/2 cups black beans
- 1 1/2 cup cooked peas
- 1/4 cup water
- 2 tbsp tahini
- 1-2 tbsp tamari
- 1/2 cup buckwheat flour
- 2 tsp ground cumin
- 1 tsp coriander
- 1 tsp sea salt
- Freshly ground pepper
Directions:
Combine black beans, peas, water, tamari, and tahini in a food processor until smooth. Transfer to a bowl and stir in spices, and flour. Form into 7-8 patties. Bake for 20 minutes in a 350F oven. Serve over salad or in a whole-grain bun. Top with tahini sauce.
