Valentine’s Day Sugar Cookies
Yield: 12 cookies
1 cup Vegan Sugar
1/8 tsp Salt
3/4 cup Earth Balance
5 tbsps Almond milk
1 tsp Vanilla Extract
2 ¼ cups All-Purpose Flour or Pastry Flour
1 tsp Baking Powder
2 cups Powdered Sugar
2 tbsps Almond Milk
With a fork, cream the Earth Balance and sugar together in a bowl. Add in the flour, baking powder, and salt and stir. Then stir in the 5 tbsps of almond milk and vanilla until you have a ball of dough.
Cover the dough and chill for at least an hour.
Pre-heat the oven to 400 degrees F.
Place the dough on a floured surface. Use a rolling pin to make the dough about ¼ of an inch thick. Use a cookie cutter to make fun shapes like hearts or cut out circles with a round glass.
Place the cookies on an ungreased cookie sheet, about an inch apart. Bake for about 8 to10 minutes.
Make the icing by whisking together the powdered sugar and 2 tablespoons of almond milk. Allow the cookies to cool and then add icing with a butter knife or frosting spatula.
