Tofu and Brussels Sprouts Kebabs
Yield: 10-15 servings

1 lb Brussels Sprouts
1 package Extra Firm Tofu, pressed
1/4 cup Maple Syrup
1/4 cup Olive Oil
1 tbsp Soy Sauce
1/4 tsp Ginger
Kebab Skewers

Chop the tofu into cubes.

Make the marinade by whisking together the maple syrup, olive oil, soy sauce and ginger. Place the tofu and Brussels sprouts in separate sealable bowls or bags and pour about 1/3 of the marinade over each of them (leaving 1/3 to pour over them while they are grilled). Refrigerate for at least an hour.

Once the tofu and sprouts are done marinating, cook the Brussels sprouts in the microwave for 5 minutes.

Wait for the sprouts to cool and then place the tofu and Brussels sprouts on the skewers, alternating back and forth between the two. Place them on the grill or in the oven and pour the remaining marinade over them. Cook for about 5 minutes on each side.
