(VEGAN/VEGETARIAN RECIPES) This saucy sandwich is filled with vegetables but also includes fake sausage to make a hearty meal. Tofurky brand “Italian sausage”  is browned and simmered in tomato sauce.

Ciabatta is a delicious Italian bread that is perfect for this sandwich because it is light and airy with a crisp crust. And make sure to buy a loaf that doesn’t contain milk! Whole Foods offers delicious Ciabatta bread that is dairy free.

Italian Ciabatta Sandwich
Yield: 4 servings

1 package Tofurkey Italian Sausage
1 large loaf Vegan Ciabatta Bread
1 Zucchini
1 Eggplant
1 Yellow Onion
1 Red Bell Pepper
1 8oz can Diced Tomatoes
1 8oz can Tomato Sauce
1 tsp Italian Seasoning
1 tbsp Olive Oil
2 cloves of Garlic
Salt & Pepper To Taste

Slice the sausage, zucchini, eggplant, bell pepper, onion and garlic into small pieces. Heat the oil in a skillet and then add the sliced sausage and vegetables. When the sausage is browned and the veggies are cooked through, lower the heat and add the tomato sauce, diced tomatoes, and Italian seasoning. Simmer for about two or three minutes.

Slice the Ciabatta in half. Add the sausage mixture. Enjoy!
