Chickpea Masala
Yield: 4 servings
Ingredients
2 Potatoes, peeled and diced
1 15 oz can Chickpeas
2 cups Fresh Spinach
1 14.5 oz can Diced Tomatoes
2 cloves Garlic, minced
1 tbsp Garam Masala
1/2 tsp Salt
1/2 tsp Cumin
1/2 tsp Ginger
1 tsp Paprika
Directions
Fill a large pan with about an inch of water and bring to a boil. Add the diced potatoes and cook until the potatoes soften. Then add in the garlic and onion and cook for 1 to 2 minutes.
Add the tomatoes and cook for about 5 minutes, mashing some of the tomato to make a sauce.
Add the garam masala, salt, cumin, ginger, paprika and spinach. When the spinach starts to cook down, add the chickpeas. Continue to cook, stirring the ingredients together.
