Sausage Tofu Scramble
Yield: 4 servings

Ingredients
1 Package Medium Firm Tofu, crumbled
8 oz package Cremini Mushrooms
1 tbsp Olive Oil
1 tbsp Cooking Wine
1 Field Roast Wild Mushroom Quarter Loaf, diced
2 cups Fresh Baby Spinach
1 tbsp Fresh Parsley, chopped
1 tbsp Soy Sauce
2 tsps Nutritional Yeast
1 tsp Garlic Powder
1 tsp Turmeric
Sea Salt and Black Pepper To Taste

Directions
Add the mushrooms and cooking wine to a large pan and simmer until cooked through.

Add the tofu, parsley, soy sauce, nutritional yeast, garlic powder, and turmeric to another large pan and cook for 5 minutes, stirring continually. Add the spinach and cook for one more minute.

In another pan, heat the olive oil. Add the Field Roast sausage pieces and stir-fry for 3-5 minutes.

Stir the mushrooms and the sausage into the tofu scramble. Sprinkle on salt and pepper and serve.
