This recipe uses Beyond Meat chicken and Vegenaise, but feel free to choose your favorite faux chicken and mayo. It’s perfect as a side dish or you can add a dollop atop a bed of lettuce or on a sandwich bun to make it a full meal! — Global Animal

Faux Chicken Salad
Yield: 6-8 servings

2 cups Vegan Chicken, chopped
1 stalk Celery, diced
1 tsp Fresh Rosemary
1 tbsp Fresh Parsley
1/3 cup Vegan Mayo
1 tbsp Lemon Juice
1 tsp Dijon
1/4 tsp Salt
1/4 tsp Black Pepper
1/3 cup Craisins
1/2 cup Roasted Almonds

In a medium bowl, whisk together the vegan mayo, lemon juice, Dijon, salt and black pepper. Add in the rosemary and parsley.

Toss this sauce with the vegan chicken, almonds, craisins, and celery.
