Elana’s Meat-Free Monday: Lentil Chili Mac

(VEGAN/VEGETARIAN RECIPES) This chili mac recipe is a delicious dinner with a twist. Lentils give the chili a meaty texture and chipotle flakes give it a spicy kick. Just add more flakes if you like it really spicy.

Lentil Chili Mac
Yield: 6-8 servings

1 15 oz can Brown Lentils
1/2 cup Water
1/2 cup Onion, chopped
3 cloves Garlic, minced
2 tsp Chili Powder
1 tsp Ground Cumin
1 tsp Paprika
1/2 tsp Chipotle Flakes
1 8 oz can Tomato Sauce
1 tbsp Olive Oil
6 oz Whole Wheat Macaroni
Dash of Salt

Heat the oil in a large pot. Add the garlic and onion and stir-fry for about 2 minutes. Add in the lentils, water, chili powder, cumin, paprika, chipotle, and tomato sauce. Simmer for 20-25 minutes.

In another pot, boil 4-6 cups of water. Add the pasta with a dash of salt. Boil for 6-7 minutes.

Serve plates of macaroni with chili spooned on top.
