Barbecue Seitan Sandwich
Yield: 4 servings

Ingredients
1 fresh Pineapple, cut into slices
16 oz pre-cooked Seitan Strips
8 slices Wheat or White Bread (thick slices)
2 tbsp Earth Balance
1 tsp Garlic Powder
2/3 cup Barbecue Sauce

Directions
Grill the slices of pineapple for 3-5 minutes on each side, or until the grill marks are present.

Smooth the butter onto the bread slices and sprinkle the garlic powder on top. Place on the grill for 1-2 minutes on each side until lightly browned.

For the seitan, you can either heat it wrapped in aluminum foil on the grill (the pieces are a bit small to put on a skewer) or you can use a skillet. It should already be pre-cooked so you only have to heat it. Then add the barbecue sauce, stir and heat for 1 minute.

Assemble the sandwich by placing the barbecue seitan on one slice of Texas Toast that is facing down. Add a slice of grilled pineapple on top and finish with the other piece of Texas toast facing up.
