Barley and Broccoli Casserole
Yield: 6 servings

2 cups Vegetable Broth
1 cup Barley, soaked overnight
3 cups Broccoli
1 cup Vegan Cheese (Cheddar Style)
1 tbsp Panko
1 tsp Garlic Powder
1 tsp Sea Salt
1/2 tsp Black Pepper

Pre-heat oven to 350 degrees F.

Mix together the broccoli, barley, vegetable broth, garlic powder, salt, and pepper in a casserole dish. Layer vegan cheese over the top of the casserole. Then sprinkle over the panko crumbs.

Bake for about 30 minutes until the barley is chewy and the liquid has baked completely into the casserole.
