Chocolate Coconut Marshmallows
Yield: 10-12 servings

1 10 oz package Dandies Vegan Marshmallows
112 grams Baker’s Chocolate (about half a cup)
3/4 cup Vegan Sugar
2 oz Coconut Shreds

Spread the coconut out on a lined baking sheet. Toast in the oven for about five minutes. Keep an eye on the coconut to make sure it doesn’t burn.

Melt the chocolate with the sugar in the microwave or over a double boiler.

Dip the marshmallows into the chocolate and then roll them in the toasted coconut.

Refrigerate until the chocolate sets and then the marshmallows can be kept at room temperature.
