(VEGAN/VEGETARIAN) This recipe is inspired by gumbo, a Southern favorite that’s not traditionally vegan. But with the substitution of some vegan sausage and red beans, this recipe is close to the real thing. The sausage can even be omitted for a simple, but spicy red bean dish.

Red Bean and “Sausage” Gumbo
Yield: 4 servings
Ingredients
2 links Vegan Sausage, diced into 1 inch pieces
1 tbsp Olive Oil
2 tbsp Vegetable Oil
3 cups Dry Red Beans, soaked overnight
1 large Onion, chopped
1 stalk of Celery, chopped
1 Green Bell Pepper, chopped
½ tsp Sea Salt
½ tsp Black Pepper
2 Bay Leaves
1 tbsp Parsley
2 tsps Thyme
8 cloves of Garlic, minced
5 cups Vegetable Stock
1 tsp of Chipotle or Red Pepper Flakes
3 tsps Chili Powder or Hot Sauce
1 tsp dry Oregano
2 cups Okra, chopped
Directions
In a large pot, heat up the vegetable oil and then stir-fry the onion, green pepper, garlic, okra, and celery until softened.
Then add in the rest of the ingredients except for the sausage and olive oil. Bring to a boil and then turn the heat down and simmer, uncovered. Cook for about 2 hours until the beans soften.
Heat the olive oil in a pan and saute the diced sausage. Add the sausage on top of the gumbo when serving.
