(VEGAN/VEGETARIAN) Fried rice recipes can sometimes be soaked in oil, but it’s not difficult to make a healthier version that’s still restaurant quality. This healthy recipe calls for only one tablespoon of sesame oil, omits the egg, and adds in extra veggies. Sesame oil contains calcium, iron, and B6—all important vitamins for a vegan diet.

Mango and Tofu Fried Rice
Yield: 4 servings

1 package Firm Tofu, pressed
2 cups Brown Rice
1 cup frozen Mixed Vegetables, thawed
1 cup Broccoli, chopped
2 Mangos, chopped into cubes
1 small Onion, chopped
6 cloves of Garlic
1 tsp Sesame Seeds
2 tbsps Soy Sauce
1 tbsp Sesame Oil

For the Tofu Marinade
1/4 cup Soy Sauce
1/4 tsp Ginger
1/2 tsp Garlic Powder

Cut the tofu into cubes and then place in a bowl with the marinade. Marinate for at least one hour.

Place the tofu (including marinade), mangos, and sesame seeds in a medium sized pan and stir-fry until browned.

Meanwhile, in a large pan or wok, heat up the onion, garlic cloves, and broccoli in sesame oil. When the broccoli is cooked through, add in the mixed veggies and stir-fry for one minute. Finally, add in the rice, 2 tablespoons of soy sauce, and 1/4 tsp ginger. Stir-fry all together until heated.

Place the fried rice on a plate and then add the mangos and tofu on top.
