(VEGAN/VEGETARIAN RECIPES) This recipe is based on Cuban style picadillo, a ground beef based dish. There are many delicious brands of vegan soy crumbles that can replace the beef and you won’t even notice the difference!

This recipe uses Trader Joe’s Beef-less Ground Beef. Traditional Cuban picadillo includes raisins, however they can be easily omitted if preferred. Picadillo is quick and easy to make, so enjoy it tonight with some black beans and white rice or fry up some tostones (a version of plantains). — Global Animal

Cuban Picadillo
Yield: 4 servings

Ingredients
1 package Vegan Beef Crumbles
1 Yukon Potato, cut into small cubes
2 8 oz can Tomato Sauce
2 tbsp Olive Oil
1 small Onion, diced
1 Green Bell Pepper, diced
4 cloves of Garlic, minced
1/3 cup Pimento Stuffed Green Olives
1 tbsp Green Olive Brine
1/4 cup Dry White Wine
1 cup of Water
1 Bay Leaf
1/2 tsp Cumin
1/2 tsp Oregano
Salt & Pepper To Taste
1/2 cup Raisins (optional)

Directions
Heat the oil in a skillet and saute the pieces of potato. Once they start to soften, add in the onion, pepper, and garlic and continue to saute until all veggies are cooked through. Then add in the rest of the ingredients and simmer for about ten minutes. (If you use a frozen version of soy beef crumbles, then you may need more water and more time for the fake beef to cook.)

Remove the bay leaf and serve.
