(MEATLESS/VEGAN/VEGETARIAN RECIPES) Summertime is definitely the best time of year to eat blueberries. In most areas they begin to ripen in May when the weather gets warmer, and they continue to ripen through September. Blueberries are at their sweetest and there are plenty available, so they’re usually on sale.
I decided to take full advantage and buy some fresh blueberries instead of the frozen ones I usually use in my morning smoothie. I even found a delicious blueberry parfait recipe to help shake-up my morning routine.

Greek Yogurt, Chocolate, Walnut, Blueberry Parfait
- 1/2 cup fresh or frozen blueberries, thawed
- 2 cups Whole Soy & Company Organic Yogurt, Vanilla flavored
- 2 1/2 tablespoons mini dark-chocolate chips (optional)
- 1/2 cup oat granola
- Chopped walnuts

Preparation
Spoon 1 tablespoon fresh or frozen blueberries, thawed, into each of the four parfait glasses. Spoon 1/4 cup of yogurt over the berries in each glass, then top each with 1 teaspoon mini dark-chocolate chips, 1 tablespoon oat granola, and a sprinkling of chopped walnuts. Add another layer of the berries, yogurt, chocolate, walnuts, and granola to each glass; serve.
