4. Chocolate Mouse with Sea Salt
2 ripe avocados
1 113g bar of 100% cacao, unsweetened baker’s chocolate
1 teaspoon vanilla extract
1/2 teaspoon sea salt
1/4 cup sugar
1/4 cup cocoa powder
1/8 cup non dairy milk (I use hemp milk. If you want a thinner mousse, add a little more.)
Spoon avocado into a food processor and add in vanilla, salt sugar and cocoa powder. Mix until smooth.
In a double boiler melt baking chocolate and add to mixture. When smooth, spoon into serving dishes and chill until time to serve. You can also eat the mousse right away if you don’t mind it a little warm.
Garnish by sprinkling with a little bit of sea salt.
