(VEGAN RECIPE) This week’s Meat-Free Mondays Challenge is a sweet one! Want an easy cookie recipe that might make some celebrity chefs cringe? Look no further. No butter. No oil. No added sugar. Tons of flavor! These cookies are incredibly versatile and are ready to eat in under thirty minutes.

I used maple syrup instead of sugar, but you could omit that and use apple sauce. The cookies won’t be as sweet. To kick up the sweetness thrown in raisins or pitted chopped dates.
Super Cookies
- 2 T flaxseed meal
- 6 T warm water
Mix together and set aside. This is an egg replacer. 1T flax meal, 3T warm water = 1 egg.
Dry Ingredients
- 1 C. pastry flour
- 1/2 t. baking powder
- 1/2 t. baking soda
- 1/2 t. salt
- 1 t. cinnamon
- 1/2 t. nutmeg
- 1 C. rolled oats
Whisk ingredients together in large mixing bowl.
Wet Ingredients
- 1 banana, mashed
- 1 T. vanilla
- 1/2 T. almond extract
- 2 T. soymilk
- 1/2 C. maple syrup
- 1/2 C. almonds, finely chopped
- 1/2 C. goji berries
- 1/2 C. vegan chocolate chips
Mix ingredients together in large mixing bowl, add flax mixture.
Preheat oven to 375. Add the wet mixture to the dry combine with a wooden spoon. Do not over mix. Scoop medium spoonfuls of mixture onto an oiled non-stick cookie sheet and make for 10 minutes. Then, place on a cooling rack. Cookies will be moist and will harden as they cool. Eat immediately or store in an airtight container. Enjoy!
