Megan’s Meat-Free Monday: Nachos With Sour Cream

(VEGAN RECIPE) Who doesn’t love nachos? Perhaps it’s not the healthiest meat-free Monday challenge, but there are ways to cut down on the fat. First, by baking your own chips. Second, cut the cream sauce with water or non-dairy milk, or omit it all together. Finally, load up on heathy salsa!

(VEGAN RECIPE) I’m taking it easy on you for this week’s Meat-free Monday challenge. This simply prepared meal takes a little amount of prepping and an even smaller amount of cooking. The fried garbanzo beans add the perfect amount of crunch! They also make great snacks all by themselves. I prefer to eat this salad right after it’s made, but it tastes great at room temperature and even cold. It’s filling enough for a main dish, but is also a great side. — Global Animal

District Attorney Hires Canine For Courtroom (VIDEO)

(THERAPY DOGS) NEW YORK — The Staten Island District Attorney’s office recently brought in a 2-year old Labrador-golden retriever mix, named Bronksey, to be a therapy dog for crime victims during legal proceedings. Bronksey is trained to stay by the side of victims, even in the witness box, providing them with comfort. He has already helped tremendously by calming a 12-year old abuse victim before he went on trial.
