Megan’s Meat-Free Monday: Blueberry Pancakes With Peanut Butter

No other food reminds me of my childhood more than pancakes. Big fluffy pancakes that, from time to time, my dad would sometimes shape into Mickey Mouse. Pancakes weren’t pancakes to me unless they were smothered in peanut butter and maple syrup. For this weeks Meat-Free Monday I upgraded dad’s “just add water” recipe, but kept the peanut butter and maple syrup.

Rescue Dogs Track Endangered Species

(ENDANGERED SPECIES) — There is no doubt about it: dogs have much better noses than humans. A human has about 5,000 scent receptors and some breeds, like German Shepards, have about 250,000 million. Some high-energy dogs that unfortunately end up in shelters are finding careers with conservation scientists. The rescue dogs are trained to smell and track animal droppings from land and ocean. Spanish rice, how I love it, but can rarely order it as it usually contains chicken stock. Luckily for you home cooks it’s a fairly easy dish that contains ingredients than are inexpensive and you might already have them your pantry. It’s a hardy dish that lasts and reheats nicely.

Central California Has Seismic Concerns

(OCEANS/TAKE ACTION) CALIFORNIA — Animal advocates are deeply concerned for California’s central coast marine life in response to PG&E’s decision to start seismic mapping this November. The Seismic Imaging Project entails blasting 18 underwater cannons every 15-20 seconds, 24 hours a day for 33 days. The blasts send shock-waves into the earths crust which will supply data to create 3-D images of multiple earthquake faults near Diablo Canyon nuclear power plant. The project will test whether further precautions are necessary to prevent a nuclear meltdown in the event of an earthquake, not unlike the 2011 nuclear disaster in Fukushima, Japan. — Global Animal

Megan’s Meat-Free Monday: Chimichurri Grilled Zucchini & White Bean Puree

(VEGAN RECIPE) Today’s Meat-Free Monday challenge is a recipe for a delicious appetizer that lends itself to hundreds of variations. Grilled zucchini are an amazing addition to nearly any sandwich, salad or even al a carte. The marinade is really what will set your zucchini apart from the rest. In this recipe, I used an Argentinian sauce called Chimichurri. It’s a little spicy with a lot of garlic and parsley flavors. The white bean puree is used here as a spread. This puree can easily be turned into a dip, filling, or even soup. It’s also a wonderful mashed potato replacement! — Global Animal
