Elana’s Meat-Free Monday: Lentil Veggie Soup

(VEGETARIAN/VEGAN RECIPES) This simple soup is versatile and hearty! Most lentil soups are just lentils in a tomato broth, but this version is heavy on the vegetables to boost nutrition.

Lentil Veggie Soup

Yield: 2 servings (4 servings as a side dish)

Ingredients

  • 2 cups Vegetable Broth
  • 2 cups Water
  • 8 oz can Tomato Sauce
  • 1 tsp Oregano
  • 1 tsp Basil
  • ½ tsp Garlic Powder
  • ½ cup Brown Lentils
  • 1 cup Frozen Mixed Veggies
  • Salt & Pepper to Taste

Directions

Bring water, vegetable broth, tomato sauce, oregano, basil, and garlic powder to a boil. Add in the rest of the ingredients and lower the heat. Simmer for 30 minutes. Add salt and pepper to taste.
